1 lb ground beef

1 medium onion, finely chopped

2 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 packet (1 oz) taco seasoning

1/2 cup corn (frozen or canned, drained)

1 cup shredded cheddar cheese (plus extra for topping)

Salt and pepper, to taste

For the Enchilada Sauce:

2 cups red enchilada sauce (store-bought or homemade)

1 tsp ground cumin

1/2 tsp smoked paprika

1/2 tsp chili powder

For Assembly:

8-10 corn or flour tortillas

1 cup diced tomatoes (optional, for garnish)

1/4 cup fresh cilantro, chopped (for garnish)

Sour cream (for serving)

Instructions
 

Prepare the Beef Filling:

    - Heat a large skillet over medium heat. Once hot, add the ground beef. Cook, breaking the meat apart with a spatula until browned, approximately 5-7 minutes.

      - Add the chopped onion and minced garlic to the skillet. Sauté until the onion becomes translucent, about 3-4 minutes.

        - Stir in the black beans, corn, taco seasoning, and season with a pinch of salt and pepper. Cook for an additional 2-3 minutes, allowing the flavors to meld. Remove from heat.

          - Mix in 1 cup of shredded cheddar cheese until fully integrated into the mixture.

            Make the Enchilada Sauce:

              - In a medium saucepan, combine the red enchilada sauce, ground cumin, smoked paprika, and chili powder. Bring the mixture to a simmer over medium heat, stirring occasionally. Allow it to cook for about 5 minutes before removing from heat.

                Assemble the Enchiladas:

                  - Preheat your oven to 375°F (190°C).

                    - Spread 1 cup of enchilada sauce evenly across the bottom of a 9x13-inch baking dish.

                      - For each tortilla, place approximately 1/4 cup of the beef filling in the center. Roll the tortilla tightly and place it seam-side down in the prepared baking dish. Continue this process until all tortillas are filled and arranged in the dish.

                        - Pour the remaining enchilada sauce over the top of the rolled enchiladas, making sure to coat each one thoroughly.

                          - Sprinkle additional shredded cheddar cheese generously over the enchilada sauce.

                            Bake:

                              - Cover the baking dish with aluminum foil to prevent the cheese from burning. Place it in the preheated oven and bake for 20 minutes. After this time, remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted, bubbly, and golden brown.

                                Serve:

                                  - Once baked, remove the dish from the oven and allow it to cool for a few minutes. Garnish with diced tomatoes and chopped cilantro. Serve warm with a dollop of sour cream on the side for added creaminess.
