1/2 cup sour cream

1/4 cup cream cheese, softened to room temperature

4 tablespoons unsalted butter, melted

1 teaspoon garlic powder

Salt and black pepper, to taste

1/4 cup green onions, sliced (for garnish)

1/2 cup grated Parmesan cheese (for topping)

Prepare the Potatoes: Begin by placing the diced russet potatoes into a large pot. Fill the pot with enough water to fully submerge the potatoes. Bring the water to a boil over medium-high heat. Allow the potatoes to cook for 15-20 minutes, or until they are fork-tender. Once cooked, drain the potatoes in a colander and set aside.
