3 large onions (thinly sliced)

2 tablespoons unsalted butter

1 tablespoon olive oil

1 teaspoon sugar

1 teaspoon balsamic vinegar

1 cup grated Gruyère cheese

1/2 cup heavy cream

2 large eggs

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

Preheat the Oven: Start by preheating your oven to 400°F (200°C) to ensure it’s hot and ready for baking the tart.

    Prepare the Caramelized Onions: In a large skillet, melt the butter and olive oil over medium heat. Once sizzling, add the thinly sliced onions. Sauté the onions for about 10 minutes, stirring occasionally, until they begin to soften and become translucent.

      Caramelization Process: Sprinkle the sugar evenly over the softened onions, then reduce the heat to low. Allow the onions to cook for an additional 20-25 minutes, stirring frequently. Watch for them to turn golden brown and caramelize beautifully. Just before removing from heat, stir in the balsamic vinegar, and season with salt and pepper to taste. Let the mixture cool slightly.

        Roll Out the Puff Pastry: Turn your attention to the puff pastry. On a lightly floured surface, roll it out to fit a 9-inch tart pan.
