1 sheet of puff pastry (thawed if frozen)

3 large onions (yellow or sweet), thinly sliced

2 tablespoons olive oil

2 tablespoons unsalted butter

1 teaspoon sugar

1 teaspoon balsamic vinegar

Salt and pepper to taste

4 oz fresh goat cheese, crumbled

1 cup ricotta cheese

2 large eggs

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

½ cup grated Parmesan cheese

Fresh arugula for garnish (optional)

Prepare the Puff Pastry: Preheat your oven to 400°F (200°C). On a lightly floured surface, roll out the puff pastry to fit a 9-inch tart pan, trimming away any excess at the edges. To prevent the base from puffing up during baking, prick it gently with a fork. Chill the pastry in the refrigerator for about 15 minutes to help it hold its shape.

    Caramelize the Onions: In a large skillet, combine the olive oil and butter over medium heat. Once hot, add the thinly sliced onions. Stir well to coat them in the mixture. Cook the onions for about 15-20 minutes, stirring occasionally, until they turn golden brown and become tender. Stir in the sugar and balsamic vinegar, then season with salt and pepper. Continue cooking for an additional 5-10 minutes until the onions are richly caramelized and slightly sticky. Remove from heat and allow to cool slightly.

      Mix the Filling: In a mixing bowl, blend together the ricotta cheese, crumbled goat cheese, eggs, thyme, and a pinch of salt and pepper. Use a fork or whisk to ensure the mixture is smooth and creamy, with all ingredients thoroughly combined.
