Caprese Chicken with Balsamic Glaze

4 boneless, skinless chicken breasts

2 cups cherry tomatoes, halved

8 oz fresh mozzarella cheese, sliced

1 cup fresh basil leaves, torn

1/2 cup balsamic vinegar

2 tablespoons olive oil

2 cloves garlic, minced

Salt and pepper, to taste

1 teaspoon Italian seasoning (optional)

Prepare the Balsamic Glaze: In a small saucepan, add the balsamic vinegar (and honey if desired) over medium heat. Bring to a gentle simmer, then reduce the heat to low. Allow it to simmer for approximately 10-15 minutes, stirring occasionally, until the mixture thickens to a syrupy consistency. Once thickened, remove from heat and allow it to cool.

    Preheat the Oven: Preheat your oven to 375°F (190°C) to prepare for roasting the chicken.

      Season the Chicken: Pat the chicken breasts dry with paper towels. Season both sides generously with salt, pepper, and Italian seasoning, if using, ensuring an even coating for enhanced flavor.

        Sear the Chicken: In a large oven-safe skillet, warm the olive oil over medium-high heat. Carefully place the seasoned chicken breasts into the skillet and sear for approximately 5-7 minutes on each side until they achieve a golden-brown crust.
