4 large whole wheat or spinach tortillas

1 cup shredded lettuce

1 cup diced fresh tomatoes

1/2 cup crumbled feta cheese or a dairy-free cheese alternative (optional)

1/4 cup ranch dressing or vegan ranch dressing

Fresh cilantro or parsley for garnish (optional)

Prepare the Chickpeas: In a medium-sized mixing bowl, use a fork or potato masher to lightly mash the drained chickpeas. Aim to leave some whole for added texture in the filling.
