These delightful confections, often described as the lighter counterpart to brownies, boast a unique flavor profile that balances sweetness with a hint of buttery richness. Unlike their chocolatey counterparts, blondies are typically made with brown sugar, which imparts a warm, caramel-like sweetness and a soft, fudgy texture. As we transition into the fall season, the allure of pumpkin-infused desserts becomes irresistible, inviting us to embrace the cozy flavors that define this time of year.

Ingredients

1 cup unsalted butter (2 sticks)

1 cup packed brown sugar

1/2 cup granulated sugar

1 cup pumpkin puree (canned or homemade)

2 large eggs

1 teaspoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon pumpkin pie spice

1/2 teaspoon salt

1 cup white chocolate chips (or your choice of nuts, optional)

1/2 cup chopped pecans (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Prepare a 9x13 inch baking dish by greasing it and then lining it with parchment paper, making sure to leave some parchment hanging over the edges for easy removal later.

Brown the Butter: In a medium saucepan over medium heat, melt the unsalted butter, stirring constantly. Keep cooking until the butter turns a deep golden brown and emits a nutty aroma, which should take about 5-7 minutes. Once browned, remove the saucepan from the heat and let the butter cool slightly.

Mix Sugars and Pumpkin: In a large mixing bowl, combine the browned butter, brown sugar, and granulated sugar. Whisk these ingredients together until smooth and well-mixed. Next, add the pumpkin puree and blend until the mixture is completely smooth.

Incorporate Eggs and Vanilla: Crack the eggs directly into the sugar-pumpkin mixture and add the vanilla extract. Whisk until everything is fully blended and uniform.

Prepare Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, pumpkin pie spice, and salt, ensuring they are well combined.

Combine Mixtures: Gradually introduce the dry mixture to the wet ingredients. Stir gently with a spatula or wooden spoon just until combined; avoid overstirring to keep the blondies tender.

Fold in Chips and Nuts: If desired, gently fold in the white chocolate chips and chopped pecans until they're evenly distributed throughout the batter.

Transfer Batter to Baking Pan: Carefully pour the blondie batter into your prepared baking pan, spreading it out evenly with a spatula.

Bake: Place the pan in your preheated oven and bake for 25-30 minutes. The blondies are done when the edges are set and a toothpick inserted into the center comes out with moist crumbs (not wet batter).

Cool and Cut: After baking, allow the blondies to cool in the pan on a wire rack for at least 10 minutes. Use the parchment overhang to lift them out and transfer to the rack to cool completely before cutting into squares.

Serve and Enjoy: Once cooled, slice into squares and enjoy your blondies warm or at room temperature. For an extra touch of flavor, feel free to sprinkle with flaky sea salt just before serving!
