Broccoli Cheddar Quinoa Casserole

1 cup quinoa, rinsed

2 cups vegetable broth (or water)

2 cups chopped broccoli florets

1 cup shredded sharp cheddar cheese (plus extra for topping)

1/2 cup grated Parmesan cheese

1 medium onion, diced

3 cloves garlic, minced

1 cup whole milk (or plant-based milk)

2 large eggs

1 teaspoon Dijon mustard

1 teaspoon smoked paprika

1 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper

1 tablespoon olive oil

1/4 cup breadcrumbs (optional, for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the oven: Start by preheating your oven to 350°F (175°C). Lightly grease a 9x13 inch baking dish using a small amount of olive oil to prevent sticking.

    Cook the quinoa: In a medium saucepan, bring the vegetable broth to a vigorous boil. Stir in the rinsed quinoa, then reduce the heat to low. Cover the saucepan and let it simmer for about 15 minutes, or until the quinoa is fluffy and all the liquid has been absorbed. Once cooked, set it aside to cool slightly.

      Sauté the vegetables: Heat a large skillet over medium heat and add the olive oil. Once the oil is shimmering, add the diced onion. Sauté for approximately 5-7 minutes, stirring occasionally, until the onion is soft and translucent. Then, add the minced garlic and cook for an additional minute, until fragrant.

        Add the broccoli: Introduce the chopped broccoli florets to the skillet. Stir continuously for about 5-6 minutes, allowing the broccoli to become bright green and tender, yet still crisp. Once done, remove the skillet from the heat and set aside.

          Combine the ingredients: In a large mixing bowl, whisk together the milk, eggs, Dijon mustard, smoked paprika, salt, and black pepper until well blended. Gradually fold in the cooked quinoa, the sautéed onion and broccoli mixture, along with both the shredded sharp cheddar and grated Parmesan cheeses. Mix everything thoroughly to ensure even distribution.

            Transfer to the baking dish: Carefully pour the quinoa and vegetable mixture into the prepared baking dish. Use a spatula to spread it out evenly across the pan. If you’d like a crispy topping, sprinkle breadcrumbs and additional sharp cheddar cheese over the top.

              Bake the casserole: Place the baking dish in the preheated oven and bake for 25-30 minutes. The casserole is ready when it's bubbling around the edges and the top is beautifully golden brown.

                Garnish and serve: Once baked, remove the casserole from the oven and allow it to cool for 5-10 minutes to set. Just before serving, garnish with freshly chopped parsley for a pop of color and added freshness.
