Ingredients

2 ripe mangoes, peeled and diced into small cubes

1 medium red onion, finely chopped

2 medium tomatoes, diced

1 fresh jalapeño pepper, seeds removed and finely chopped (adjust according to your preferred level of spiciness)

1/2 cup fresh cilantro, chopped

Juice of 2 fresh limes

Salt, to taste

1/4 teaspoon ground cumin (optional, for an earthy depth)

1 tablespoon olive oil (optional, for a touch of richness)

Instructions

In a spacious mixing bowl, start by combining the diced mangoes, finely chopped red onion, and diced tomatoes. Mix gently to avoid smashing the fruit.

Next, fold in the finely chopped jalapeño. If you prefer a spicier kick, you can opt to keep a few seeds or include an additional jalapeño.

Add the chopped cilantro and squeeze the juice of the limes into the bowl. Season with salt to your liking. For an added dimension of flavor, you can sprinkle in the ground cumin at this stage.

To enrich the salsa, drizzle with olive oil and then gently toss the mixture to ensure all ingredients are well incorporated.

Taste your creation and adjust the seasoning as necessary, adding more salt or lime juice if desired.

Let the salsa rest for a minimum of 20 minutes before serving. This resting time allows the flavors to meld and develop further.

Serve this vibrant salsa chilled as a refreshing dip alongside tortilla chips or as an exciting topping for grilled chicken, fish, or tacos.

                Prep Time: 15 minutes | Total Time: 35 minutes | Servings: 4-6
