Ingredients

2 boneless, skinless chicken breasts

Salt and freshly ground black pepper, to taste

2 tablespoons extra virgin olive oil

1 cup fresh strawberries, hulled and sliced

1/4 cup balsamic vinegar

2 tablespoons honey

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

1 teaspoon garlic, minced

1/4 cup crumbled feta cheese (optional)

Fresh basil leaves for garnish (optional)

Instructions

Prepare the Chicken: Generously season the chicken breasts with salt and pepper on both sides, ensuring they are evenly coated.

Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the seasoned chicken breasts. Cook for about 5-6 minutes on each side, or until the chicken is golden brown and no longer pink in the center. Use a meat thermometer to ensure the internal temperature reaches 165°F (75°C). Once cooked, carefully remove the chicken from the skillet and set it aside on a plate.

Make the Balsamic Sauce: In the same skillet, without wiping it clean, add the sliced strawberries along with the balsamic vinegar, honey, thyme, and minced garlic. Stir gently and cook for about 3-4 minutes, allowing the strawberries to soften and the sauce to thicken slightly. You'll want the sauce to be syrupy and fragrant.

Combine Chicken and Sauce: Return the cooked chicken to the skillet, carefully nestling it into the balsamic-strawberry sauce. Spoon the sauce over the chicken, then reduce the heat to low and let it simmer for an additional 2 minutes. This step allows the chicken to absorb the delicious flavors of the sauce.

Serve: To serve, plate the chicken alongside a generous drizzle of the balsamic strawberry sauce. If using, sprinkle crumbled feta cheese on top for a creamy contrast and garnish with fresh basil leaves to elevate the dish's freshness and presentation.

Enjoy Your Meal: Serve this delightful dish hot and pair it with a side of fluffy quinoa, steamed rice, or a vibrant green salad to complement the flavors.
