Ingredients

8 oz (225 g) cremini or button mushrooms, sliced

2 tablespoons balsamic vinegar

1 tablespoon extra virgin olive oil

2 cloves garlic, minced

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

Salt and freshly cracked black pepper, to taste

4 slices of rustic bread (such as sourdough or multigrain)

1 tablespoon unsalted butter (optional, for extra richness)

Fresh parsley, finely chopped (for garnish)

Crumbled feta cheese or goat cheese (optional, for serving)

Instructions

Sauté the mushrooms: In a large skillet, heat the olive oil over medium heat. Once the oil is shimmering, add the sliced mushrooms. Sauté for approximately 5-7 minutes, stirring occasionally, until the mushrooms are golden brown and tender.

Incorporate garlic and thyme: Add the minced garlic and fresh thyme to the skillet. Cook for an additional 1-2 minutes, stirring frequently, until the garlic releases its fragrance, being careful not to let it brown.

Create the balsamic glaze: Pour the balsamic vinegar over the sautéed mushrooms, season with salt and freshly cracked black pepper to taste. Stir well to ensure the mushrooms are evenly coated. Allow the mixture to cook for another 2-3 minutes, letting the vinegar reduce slightly and coat the mushrooms in a glossy glaze.

Toast the bread: While the mushroom mixture is cooking, toast the slices of bread in a toaster or on a grill pan until they are golden and crispy. If you like, spread a thin layer of unsalted butter on each slice immediately after toasting for added creaminess.

Assemble the toast: Generously spoon the balsamic glazed mushrooms over each slice of toasted bread, making sure to include some of the flavorful juices.

Garnish and serve: Top the mushroom toast with a sprinkle of chopped fresh parsley for color and freshness. If desired, add crumbled feta or goat cheese for an extra layer of flavor. Serve immediately to enjoy the contrast of warm toppings on crispy toast.
