Ingredients

8 oz elbow macaroni

4 cups sharp cheddar cheese, grated

1 cup mozzarella cheese, grated

½ cup Parmesan cheese, grated

4 tablespoons unsalted butter

¼ cup all-purpose flour

3 cups whole milk

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon mustard powder

Salt and pepper, to taste

1 cup panko breadcrumbs

2 tablespoons olive oil

½ teaspoon smoked paprika

Fresh parsley, chopped (for garnish, optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish to prevent sticking.

Cook the Pasta: Fill a large pot with water, season it generously with salt, and bring it to a rolling boil. Add the elbow macaroni and cook according to the package instructions until al dente. Once cooked, drain the pasta and set it aside.

Prepare the Cheese Sauce: In a medium saucepan over medium heat, add the unsalted butter. Once melted, whisk in the all-purpose flour, stirring constantly for about 1-2 minutes until the mixture becomes bubbly and lightly golden.

Add Milk and Seasonings: Gradually whisk in the whole milk, making sure to eliminate any lumps in the mixture. Continue cooking while stirring for about 5-7 minutes, or until the sauce thickens to a creamy consistency. Stir in the garlic powder, onion powder, mustard powder, and season with salt and pepper according to your taste.

Incorporate the Cheese: Take the saucepan off the heat and add the grated sharp cheddar cheese, mozzarella, and half of the grated Parmesan cheese to the sauce. Stir until all the cheese is fully melted and the sauce is smooth and creamy.

Combine Pasta and Sauce: In a large mixing bowl, combine the drained pasta with the cheese sauce, stirring until the pasta is evenly coated in the luscious cheese mixture.

Make the Crunchy Topping: In a small bowl, mix together the panko breadcrumbs, olive oil, smoked paprika, and the remaining Parmesan cheese. Combine until the breadcrumbs are well coated with the olive oil, giving a flavorful crunch.

Assemble the Dish: Pour the macaroni and cheese mixture into the prepared baking dish, spreading it out evenly. Sprinkle the breadcrumb topping generously over the entire surface.

Bake: Place the dish in the preheated oven and bake for approximately 25-30 minutes, or until the topping is golden brown and crispy.

Serve: Once out of the oven, allow the dish to cool slightly for about 5 minutes. For a fresh touch, garnish with chopped parsley (if using) before serving. Enjoy your creamy, cheesy delight while it’s still hot!
