Ingredients

4 salmon fillets (6 oz each)

1 bunch of fresh asparagus, trimmed

3 tablespoons olive oil, divided

2 tablespoons freshly squeezed lemon juice

Zest of 1 lemon

3 cloves garlic, finely minced

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

1 tablespoon fresh parsley, chopped

1 teaspoon salt

½ teaspoon freshly cracked black pepper

Lemon slices, for garnish

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C) to ensure it's hot enough for baking the salmon and asparagus.

Prepare the Marinade: In a small mixing bowl, whisk together 2 tablespoons of olive oil, fresh lemon juice, lemon zest, minced garlic, chopped dill, chopped parsley, salt, and black pepper until well combined.

Marinate the Salmon: Place the salmon fillets in a shallow dish or a resealable plastic bag. Pour the marinade over the fillets, making sure they are well coated. Let the salmon marinate for at least 15-20 minutes while you work on the asparagus, allowing the flavors to infuse.

Prepare the Asparagus: On a large baking sheet, arrange the trimmed asparagus in a single layer. Drizzle the remaining tablespoon of olive oil over the asparagus and sprinkle lightly with a pinch of salt and pepper. Toss the asparagus gently to ensure each piece is evenly coated.

Arrange the Salmon and Asparagus: After marinating, push the asparagus to one side of the baking sheet to create space for the salmon. Carefully place the marinated salmon fillets on the other side of the baking sheet, with the skin side facing down.

Bake: Carefully place the baking sheet in the preheated oven and bake for 12-15 minutes. The salmon is done when it is opaque and flakes easily with a fork while the asparagus should be tender yet crisp.

Serve: Once baked, remove the baking sheet from the oven and garnish the salmon with fresh lemon slices. Serve immediately alongside the roasted asparagus for a delightful meal.

Enjoy your zesty Baked Lemon Herb Salmon with Asparagus!
