Ingredients

1 sheet of puff pastry, thawed

1 small wheel of Brie cheese (approximately 8 oz)

1/2 cup cranberry sauce (either homemade or store-bought)

1/4 cup chopped walnuts or pecans (optional, for added crunch)

1 egg, beaten (for the egg wash)

Fresh rosemary or thyme sprigs (for garnish)

All-purpose flour (for dusting)

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). While the oven is warming, line a baking sheet with parchment paper to prevent sticking.

Prepare the Puff Pastry: Lightly dust a clean work surface with flour. Unroll the thawed puff pastry and gently roll it out to eliminate any creases, ensuring it's an even thickness. Using a sharp knife or pizza cutter, slice the pastry into squares measuring about 3 inches by 3 inches.

Assemble the Bites: Place one pastry square onto your prepared baking sheet. Carefully cut the Brie cheese into smaller pieces, roughly 1 oz each, and place a piece in the center of the pastry square. Top the Brie with approximately 1 tablespoon of cranberry sauce, and if desired, sprinkle a few chopped walnuts or pecans over the sauce for welcomed texture and flavor.

Fold the Pastry: Gently bring the corners of the pastry square together to encase the Brie and cranberry sauce, pinching the seams to seal them tightly. Make sure each pastry is well-closed to avoid any filling leaking during baking. Repeat this step with the remaining pastry squares, ensuring they are spaced adequately on the baking sheet.

Egg Wash: Using a pastry brush, evenly coat the tops of each assembled pastry bite with the beaten egg. This will give the pastries a beautiful golden brown finish as they bake.

Bake: Carefully place the baking sheet into the preheated oven. Bake for 15 to 20 minutes, or until the puff pastry is puffed up and has achieved a golden color. Keep an eye on them to prevent burning.

Garnish and Serve: Once baked, remove the bites from the oven and let them cool for a couple of minutes. For an elegant touch, garnish each bite with a small sprig of fresh rosemary or thyme before serving. Enjoy these warm, as they make a perfect appetizer for any gathering!
