4 slices of bacon, chopped

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

2 cups whole milk

2 cups shredded sharp cheddar cheese

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

1 cup panko breadcrumbs (for extra crunch)

Cooking spray or additional butter for greasing the muffin tin

Cook the Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to the package directions until al dente (firm to the bite). Drain the pasta in a colander and set aside to cool slightly.

    Cook the Bacon: In a medium skillet over medium heat, add the chopped bacon. Cook, stirring occasionally, until the bacon is crispy and browned, about 6-8 minutes. Use a slotted spoon to transfer the cooked bacon onto a paper towel-lined plate to absorb excess grease. Leave approximately 1 tablespoon of the bacon grease in the skillet for flavor.

      Make the Cheese Sauce: In the same skillet with the reserved bacon grease, melt the butter over medium heat. Add the flour and whisk continuously for about 1 minute to create a smooth roux.
