Ingredients

1 cup grated zucchini (approximately 1 medium zucchini)

½ cup all-purpose flour

½ cup whole wheat flour

½ cup unsweetened cocoa powder

1 tsp baking soda

½ tsp baking powder

¼ tsp salt

½ tsp ground cinnamon

½ cup granulated sugar

¼ cup packed brown sugar

2 large eggs

¼ cup vegetable oil

¼ cup unsweetened applesauce

1 tsp vanilla extract

½ cup semi-sweet chocolate chips

Optional: 2 tbsp chopped nuts (walnuts or pecans)

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Prepare a mini muffin tin by lining it with paper liners or coating it lightly with cooking spray.

Prepare the Zucchini: Grate the zucchini using a box grater. After grating, place the zucchini in a clean kitchen towel or paper towel and wring out any excess moisture. Set aside to ensure the batter isn’t too wet.

Combine Dry Ingredients: In a large mixing bowl, gently whisk together the all-purpose flour, whole wheat flour, cocoa powder, baking soda, baking powder, salt, and ground cinnamon until everything is well blended.

Mix Sugars and Wet Ingredients: In a separate bowl, combine the granulated sugar, brown sugar, eggs, vegetable oil, applesauce, and vanilla extract. Whisk thoroughly until the mixture appears smooth and creamy.

Combine Wet and Dry Mixtures: Slowly pour the wet ingredients into the bowl with the dry ingredients. Use a spatula to gently stir until everything is just combined, being careful not to overmix to retain a fluffy texture.

Fold in Zucchini and Chocolate Chips: Add the prepared grated zucchini and semi-sweet chocolate chips to the mixture. If you're adding nuts, include them at this step as well. Carefully fold everything together until evenly distributed throughout the batter.

Fill Muffin Tin: Spoon the batter into the prepared mini muffin tin, filling each cup about two-thirds full to allow for rising.

Bake: Place your muffin tin in the preheated oven and bake for 12-15 minutes. A toothpick inserted into the center of a muffin should come out clean when they are ready.

Cool: After baking, let the muffin bites cool in the tin for about 5 minutes. Then gently transfer them to a wire rack to cool completely.

Serve and Enjoy: Once completely cooled, these delightful chocolate zucchini muffin bites are perfect for snacking, especially as a tasty back-to-school treat!
