1 small red onion, thinly sliced

1 cup fresh spinach leaves (or thawed if using frozen)

1 teaspoon olive oil

1 teaspoon garlic powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and pepper to taste

Salsa and sour cream for serving (optional)

Instructions
 

Prepare the Filling:

    In a large mixing bowl, combine the thinly sliced bell peppers, finely chopped zucchini, red onion, and fresh spinach. Drizzle the olive oil over the vegetables, then sprinkle the garlic powder, ground cumin, smoked paprika, salt, and pepper.       Assemble the Quesadillas:

        Place a flour tortilla flat on a clean, dry surface. Evenly sprinkle half of the shredded cheese over one half of the tortilla.           Repeat the Process:

            Continue assembling the remaining tortillas in the same manner, creating a total of 4 quesadillas.

              Preheat the Air Fryer:
