Prep the Peppers: Preheat your air fryer to 375°F (190°C). While it's heating, slice the tops off the mini sweet peppers and remove the seeds carefully. Set them in a bowl directionally so they can hold stuffing.
Make the Filling: In a large mixing bowl, combine the shredded turkey, cream cheese, cheddar cheese, chopped cranberries, stuffing mix, sage, garlic powder, salt, and pepper. Mix thoroughly until all ingredients are well incorporated.
Stuff the Peppers: Using a small spoon or a piping bag, fill each mini pepper with the turkey mixture, pressing lightly to pack the filling in.
Air Fry: Lightly spray the air fryer basket with cooking oil. Arrange the stuffed mini peppers in a single layer in the basket, leaving space between them for air circulation. Air fry at 375°F (190°C) for 10-12 minutes, or until the peppers are tender and the filling is warmed through and slightly golden.
Garnish and Serve: Remove the stuffed peppers from the air fryer and transfer them to a serving platter. Sprinkle with fresh parsley for a pop of color and added flavor. Serve warm as an appetizer or side dish.
