  • 12.0 pieces mini sweet peppers
  • 1.0 cup cooked turkey, shredded
  • 0.5 cup cream cheese, softened
  • 0.5 cup shredded cheddar cheese
  • 0.25 cup dried cranberries, chopped
  • 0.25 cup cooked stuffing mix
  • 1.0 tsp dried sage
  • 1.0 tsp garlic powder
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 1.0 tbsp fresh parsley, chopped

Instructions
 

  • Prep the Peppers: Preheat your air fryer to 375°F (190°C). While it's heating, slice the tops off the mini sweet peppers and remove the seeds carefully. Set them in a bowl directionally so they can hold stuffing.
  • Make the Filling: In a large mixing bowl, combine the shredded turkey, cream cheese, cheddar cheese, chopped cranberries, stuffing mix, sage, garlic powder, salt, and pepper. Mix thoroughly until all ingredients are well incorporated.
  • Stuff the Peppers: Using a small spoon or a piping bag, fill each mini pepper with the turkey mixture, pressing lightly to pack the filling in.
  • Air Fry: Lightly spray the air fryer basket with cooking oil. Arrange the stuffed mini peppers in a single layer in the basket, leaving space between them for air circulation. Air fry at 375°F (190°C) for 10-12 minutes, or until the peppers are tender and the filling is warmed through and slightly golden.
  • Garnish and Serve: Remove the stuffed peppers from the air fryer and transfer them to a serving platter. Sprinkle with fresh parsley for a pop of color and added flavor. Serve warm as an appetizer or side dish.
