Ingredients

16 large portobello mushrooms, stems removed and gills scraped

1 cup cream cheese, softened to room temperature

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1/4 cup fresh parsley, finely chopped

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon freshly ground black pepper

1 cup Italian-style breadcrumbs

Olive oil spray for finishing

Instructions

Prep the Mushrooms: Start by using a damp paper towel to gently clean the portobello mushrooms, removing any dirt or debris. Carefully take out the stems and use a spoon to scrape out the gills of the mushrooms to create a bit more space for stuffing.

Make the Filling: In a large mixing bowl, combine the softened cream cheese, shredded mozzarella cheese, grated Parmesan cheese, minced garlic, chopped parsley, onion powder, smoked paprika, salt, and black pepper. Stir well until all ingredients are fully blended and the mixture is creamy and smooth.

Stuff the Mushrooms: Take each portobello mushroom cap and generously spoon the cheese filling into the hollowed centers. Make sure to pack each one firmly and heap the filling slightly above the edges for a delightful overflow of cheese goodness.

Prepare for Air Frying: Lay the stuffed mushrooms on a large, flat plate or tray. Evenly sprinkle the Italian-style breadcrumbs over the top of each filled mushroom, creating a nice crispy layer. Finish by lightly spraying the breadcrumb tops with olive oil to help them achieve a beautiful golden crunch as they cook.

Air Fry the Mushrooms: Preheat your air fryer to 375°F (190°C). Arrange the stuffed mushrooms in a single layer in the air fryer basket, ensuring there is sufficient space for air circulation; work in batches if necessary.

Cook: Air fry the stuffed mushrooms for approximately 10-12 minutes, or until the breadcrumbs turn golden brown and the mushrooms are tender. For more even browning, consider flipping them halfway through the cooking time.

Serve: Once cooked, carefully retrieve the mushroom magic bombs from the air fryer. Allow them to cool for a couple of minutes before serving. Present warm as an irresistible appetizer or snack, garnished with additional chopped parsley for a touch of color.
