1/4 cup creamy peanut butter

1 tablespoon brown sugar

1-2 teaspoons sriracha (adjust based on desired spice level)

2 cloves garlic, minced

1 teaspoon freshly grated ginger

1/4 cup full-fat coconut milk (for a richer sauce)

1 tablespoon vegetable oil (for grilling)

8-10 wooden skewers, soaked in water for 30 minutes

    Marinate the Chicken: In a large resealable plastic bag or a shallow dish, add the cubed chicken thighs. Pour half of the prepared peanut sauce over the chicken. Seal the bag or cover the dish, then toss the chicken to ensure it is evenly coated. Let it marinate at room temperature for about 10-15 minutes while you preheat the grill.
