In a mixing bowl, combine the chicken pieces with olive oil, lemon zest, fresh dill, minced garlic, onion powder, paprika, salt, and pepper. Pour in the lemon juice and mix well until the chicken is evenly coated. Cover the bowl with plastic wrap or a lid and let it marinate in the refrigerator for at least 30 minutes.
Preheat your air fryer to 400°F (200°C) for about 5 minutes.
Once marinated, take the chicken pieces out of the refrigerator. Place the chicken bites in a single layer in the air fryer basket. Ensure there’s some space between each piece for even cooking.
Air fry the chicken at 400°F (200°C) for 10-12 minutes, shaking the basket halfway through the cooking time for even crispiness.
Once cooked, remove the chicken bites from the air fryer and let them rest for a couple of minutes. Serve warm with lemon wedges on the side.
